Decadent Homemade Peanut Butter Cups

PB and chocolate is one of my favorite flavor profiles, and I have been making this recipe for years! I wanted a recipe that I felt good about eating so I could ditch my Reese's craving. My favorite way to eat them is straight out of the freezer (kept at room temp they will melt). My whole family loves them, and I can feel good about giving them a decadent treat that is made from wholesome ingredients and is incredibly satisfying.
Makes 12 peanut butter cups.

Peanut Butter Layer:
3/4 cup natural salted peanut butter
1/4 cup coconut oil
2 Tbsp raw honey
Chocolate Layer:
1/4 cup coconut oil
1/4 cup butter
1/4 cup raw honey
1/4 cup cacao powder
Begin by putting the peanut butter and coconut oil together in a glass bowl. Microwave on low/melt setting for 10-15 seconds until slightly melted and easier to mix together. Add the raw honey and mix in. Pour mixture evenly between all the cups in a muffin pan (you can use a mini muffin tin or regular; I use a regular silicon muffin tin which makes it super easy to pop out the PB cups once they are frozen). Put muffin tin in the freezer for about 20 minutes to let them harden.
Next prepare the chocolate layer by melting the oil and butter in a small saucepan over LOW heat. Once melted remove from heat and whisk in the cacao powder and raw honey. Stir until well mixed and smooth. Take out the muffin tin from the freezer and pour the chocolate mixture over the top of the PB layer. Return to the freezer for another 20 minutes and then they're done! Pop them out of the mold and store in a zip lock back in the freezer. Enjoy!!
